Apple pectin | Kohlrabi | Simple syrup . . . Proof that letting your mind entertain wacky ideas produces something special. Pectin as dessert. Why not? Ever since I learned how to extract fresh apple pectin at @frenchpastryschool in a jam-making class, I’ve always toyed with the idea of serving it as a stand-alone dessert. Then I moved to the land of apples — Washington State. When I realized the orchards were thinning their trees at the start of fall to make way for quality apples for later harvest, I knew I needed to snatch the apple thinnings that would otherwise be trash. The secret is, these sour, first-of-the-season apples have the highest amount of pectin. Apple orchards from around the state responded to my call for thinnings, and when I extracted the pectin, it produced a brilliant, vermillion hue and was mouth-smacking sour — ideal as a palate cleanser. Mother Nature provides again.
