Butternut squash mac and cheese, with bbq mushrooms and onions. I've been looking forward to cooking this all day, and it was divine. You must try it and let me know what you think🌱🌳👌 Ingredients: 400g pasta 1 large butternut squash 200g chestnut mushrooms 1 large onion 1/2 cup bbq sauce Salt Pepper Smoked paprika 300g broccoli 1 pack of asparagus 2 cups of soy milk 150g cashew nuts Handful of cherry tomatoes Peel and chop butternut squash into cubes, then boil for about 30 minutes. Place cashew nuts in a bowl of boiling water. While the butternut squash is cooking, chop onion and mushrooms and place into frying pan on low heat, cook for about 6 minutes then add BBQ sauce. Once butternut squash is cooked drain water and add the soy milk, salt, pepper and smoked paprika and blend with food processor, when smooth add the cashews and blend again until smooth. Set this aside. Now add your pasta to some boiling water and cook for about 12 minutes. When cooked drain water and add the pasta to the butternut squash mix, put on low heat, cut the cherry tomatoes in half and add to pasta, fry the broccoli and asparagus in pan for about 5 minutes.
