Fridge Frittata for my first breakfast in a very long time.  I eat breakfast for a few days after an extended fast.  Just because I’m hungry in the morning!  It is made up of leftovers in the fridge cooked/uncooked.  Add bacon and eggs and you can call it breakfast!  Family devoured it (except the little one found every zucchini) 😂  We are at the lake, so the presentation is weak. We also eat this tomorrow for breakfast because we have to rush to football. Labneh is a crowd pleaser. Made by tipping a container of probiotic Greek yogurt into a sieve lined with muslin and strain to remove most of its whey, resulting in a thicker consistency than unstrained yogurt, while preserving yogurt's distinctive sour taste. Try baking this season’s cherry tomatoes 🍅 in balsamic vinegar, garlic and herbs with olive oil and tip the warm baked tomatoes over the cool strained Labneh. Heaven. I also break ciabatta into chunks and bake for 10 minutes with olive oil, chopped rosemary and salt. Update: from yesterday, the end of my fast.  Day10, I made it! I never post pictures the same day I take them anymore because I’m always so busy and life gets the best of me. However, today I’m just bored and chillin before the big football game tonight against Norte Dame at 8pm. So, I thought this was the perfect time to show you a real life picture of my morning. I got ready, then ate chocolate oats while finishing an assignment due next week! I love multitasking and trying to get as much done as possible on the weekend to eliminate stress throughout the week. Now I don’t know what I’m going to do, but I’m sure today will be fun no matter what!
Game Day! 🏈  Football Season has started for Luke, our High Schooler and even though it’s nearly 80 degrees outside, it still called  a big pot of Chicken Orzo Soup for the tailgate 🏈 : : : Chicken Orzo Vegetable Soup : : : : 3 tbls olive oil 3 carrots peeled and sliced thin  3 stalks celery, sliced thin  1 onion, peeled and diced small  3 garlic cloves, chopped  8 cups chicken broth  2 bay leaves 4 sprigs fresh thyme  1 tsp oregano 1 tsp pepper 1 tsp salt  1/2 tsp smoked paprika  1/4 tsp chili flakes  2 cups dry orzo  3 cups chopped cooked chicken (use storebought or make your own) 1/2 cup chopped parsley  2 large handfuls of fresh baby spinach or arugula  Grated Parmesan *  In a large pot, heat oil, add vegetables and sauté 5-8 minutes, or until vegetables begin to soften.  Add the chicken broth, bay leaves, thyme, oregano, pepper, paprika, chili and bring to a boil, reduce to simmer for 5 minutes.  Add the chicken simmer for about 10 minutes. Add orzo and simmer  until aldente  When orzo is done, add parsley and remove bay leaves and thyme sprigs. Remove from heat.  Add the spinach or arugula and let the heat of the soup wilt it down. Check for seasoning and if you want a broth wire soup (because the broth gets absorbed into the orzo) just add extra water or broth. Alright, busy peeps raise your hands!🙋‍♀️ . You all should be raising your hand! If you aren’t, come on over and help me get my life in order! . The busier we are the more valuable it can be to have a solid system in place when it comes to food preparation. . Here are some things that can make meals run a little more smoothly for you each week: . 1️⃣ Batch cook: it’s helpful to double a recipe and freeze half for another time. I personally like to cook up do this with meal components each week. . This week was ground beef and chicken. Then some quinoa, sweet potatoes and I always make roasted veggies for the week. . I just store these items and use throughout the week for dinners instead of having to overthink dinner each night. . 2️⃣ Wash and chop veggies: great for snacks or to easily add as meal add-ins during the week. . 3️⃣ Give yourself some grace. Nobody is going to die if you decide it’s just easier to plan for a night of takeout. I do that once a week. It’s my kids’ favorite dinner of the week. 😂😂😂 . Ok well my busy ass is off to attempt to pack for my trip! . Fingers crossed the kids and hubs make it through the week and can get creative with all this food prep they have ready for them. . The only instructions I gave: “Here is food for the week. Cheese and charcuterie boards don’t have to be super fancy or break the bank! I have two examples here and some TIPS!! 👉🏻👉🏻If you have a budget you want to stay in:  1️⃣ limit the number of cheeses you buy (maybe you only have 3)  2️⃣ just buy generic crackers or buy the ones at the grocery store that are on sale  3️⃣ slice up a French Bread baguette!! 4️⃣ instead of buying salami or prosciutto, buy some fresh fruit 🍇  5️⃣ add regular nuts, or peanuts or pecans; doesn’t have to be fancy . . Healthy tailgating recipe alert! 🏈🔈🚨 Cucumber Bruschetta “Sliders” are a piece of cake to whip together, travel well, and only require a few simple #wholefood ingredients! 🍅 You’ll need: 1 log of pre-sliced mozzarella 2-3 Roma tomatoes 1 English cucumber 1 Tablespoon honey Balsamic vinegar Fresh basil  To make: Thinly slice basil leaves and stir in a small bowl with balsamic vinegar and honey. Slice cucumbers and tomatoes into even pieces and place mozzarella log in the center of a large serving platter. Arrange cucumbers around the perimeter and place tomatoes in between the slices of cheese. Pour balsamic mixture over the top and store in the fridge until ready to devour! I recommend topping each piece of cucumber with a piece of cheese, tomato, and another 🥒 to get that perfect “slider” bite! Enjoy!  #aiwrecipes #happyweekend #tailgating

It’s a complicated subject, but I can tell you right now that dieting is NOT the answer.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ~⠀⠀⠀⠀⠀⠀⠀⠀⠀ There have been multiple studies done that show dieting is a predictor of weight GAIN long term, resulting in an even higher weight than before the diet began (Mann, et al. 2007, Field, et al. 2003, Neumark-Sztainer et al. 2006, & Pietilaineet et al. 2011). Not to mention how likely that person is to develop an eating disorder that can be even MORE dangerous for their health.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ~⠀⠀⠀⠀⠀⠀⠀⠀⠀ Why would you use a bandaid that covers up your wound for a little while, only to find out it actually got WORSE once it comes off??⠀⠀⠀⠀⠀⠀⠀⠀ ~⠀⠀⠀⠀⠀⠀⠀⠀⠀ I know it’s so much more complicated than that. When everyone is inundated with messaging that smaller = better in every way. But I can promise you having freedom around food and in life is SO MUCH BETTER.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This can be a tricky subject to bring up, so I encourage you to DM me with any questions on this one! Salada de acelga com alho: desfolhe uma acelga, lave e escalde em água fervente. Corte em pedaços de 3-4cm, espreme levemente para eliminar o excesso de água e acomode em um refratário. Refogue alho picado ou laminado em óleo de girassol (2/3) e óleo de gergelim torrado (1/3), una vinagre de arroz ou Jerez, sal marinho (quem gosta de shoyu pode adicionar) e um pouco de água. ‘White carbs have no nutritional value.’ - Carbohydrate is a nutrient. 🙂 - White carbohydrates are a very easily digestible, readily available form of energy. 🙌🏻 - Anyone who regularly uses a lot of energy, if you work out a lot, if you train a lot, if you’re an athlete - white carbs are actually super helpful. 🏋🏼‍♀️🤸🏼‍♀️ - (But you can still eat them without doing any of the above) - The provide energy for fuel, to replenish stores and are a vital part of recovery 💪🏻 - Yes they contain less protein & fibre than their wholemeal/whole grain counterparts but that doesn’t make them inherently bad by comparison. - Viewing a food as an individual isn’t that useful. What you pair it with also matters 👀 - 📸 Toasted bagel (carbs), avocado (fats), poached eggs (protein), tomatoes and spinach (micros). 🥑⭐️ - That’s a whole lot of nutritional value right there 🤷🏼‍♀️👏🏻 - End carb stigma ✌🏻

Hello from Durango CO!  Leading up to this road trip, I was a little nervous. I had some major professor-work deadlines looming, and if I get behind in my grading even one day it turns into an all-day project. What was I going to do without internet for most of the day?  Turns out, it actually was exactly what I needed.  I was able to do most of my work in the morning and the evening, work quickly and efficiently, and I only spent an hour on the road grading.  The rest of the time I was just relaxing, and enjoying watching the scenery change.  It felt WEIRD at first - I’m used to working (between professor-ing and my wellness clients) 16 hour days. I felt like I was missing things that had to get done.  But it was also AMAZING. Liberating. Relaxing. Just spending time looking out the window, thinking the deep questions, listening to podcasts with my husband and discussing politics, the state of the world, and really examining in-depth current events.
