🥢Sesame Salad with Mediterranean Grilled Chicken🥗 . . This super tasty salad mixes two delicious cuisines: Asian and Mediterranean. Meal prepping for the whole family, for me at least, is always easiest on Sunday’s 💚💚 . . I roasted 2 cans of chickpeas (drained) with za’atar and garlic salt on 350 for 45 minutes and then 400 for an additional 15 minutes. The chicken marinated with lemon juice, za’atar, and garlic salt and then grilled on high for 10 minutes. . . PS: the tomatoes and green peppers came straight from my garden! INGREDIENTS: 1/2 lb. pasta of your choice 1 T oil 1/4 red onion finely chopped 2-3 cloves minced garlic 1 pint cherry or grape tomatoes sliced 3/4 cup white wine or veggie broth 1 T dried basil 3/4 tsp kosher salt 1/2 tsp pepper 1/2 medium bunch kale removed from stem and chopped in 1 inch pieces and gently massaged for a few seconds with touch of oil 1 cup marinated artichokes, drained 3 T capers (optional) Juice of 1/2 lemon Garnish: Red chili flakes (optional) DIRECTIONS: 1. Put pot of water on to boil for pasta. 2. Meanwhile, add oil to large pan over medium heat and once hot, add onion, stir frequently adding bit of water if pan is too dry along the way. 3. Cook 5 min, add garlic and tomatoes and cook another 3 min, careful not to burn garlic. 4. Add wine, basil, salt and pepper, stir, and raise heat if needed, to get bubbly. Then lower heat a bit to cook at a low simmer (just bubbly) for several min until liquid is reduced by half. 5. Add kale and artichokes, stir, put cover on pan, and cook another 1 min. Uncover and stir. Kale should be bright green and slightly. 6. Add sauce to cooked pasta and gently stir, adding capers and lemon juice. 7. Taste and add more salt/pepper if desired. 8. Woke up late, stared at my plants instead of cooking, snacked on bread, and am going to go to Costco soon for some ice cream. So far this Monday has been completely unproductive 😂 I did manage to make a yummy salad for lunch though! Parmesan zucchini fritters, avocado, quinoa, apples, tomatoes, and the perfect jammy eggs finished with honey mustard vinaigrette. How's your Monday going?
Although @ojskitchen has always been my number one option for healthy eating, the latest changes impacted the quality significantly. You can directly sense the change of quality and taste after the new changes. I ordered the simply Asian salad I usually order, and the taste wasn’t even close to what I’m used to. - They stopped using roasted peanuts and is now replaced with a much lower quality type.. - The teriyaki sauce was changed and consists now mainly of soy sauce and vinegar. - The Sharing size doesn’t exist anymore. The argument the staff used when asked about the changes is that “OJs is losing money” which I personally think not true, as the prices are quite high.. I hope OJs’ maintain the level of quality like they have been doing for years, and actually listen to their loyal customers, and never compromise quality.
