Seafood pasta 🍝 🦑🍴 Ingredients: Calamari Scallops  Shrimp  Parsley  Habanero Peppers (amount depending how spicy you like it) Garlic (3-4 large cloves)  Alfredo Sauce  Pasta (obviously)  Recipe:  Heat up olive oil on a pan and add minced garlic. Once the garlic starts to brown add in the finely chopped habanero peppers, scallops, calamari, shrimp and 1/2 a bunch of finely chopped parsley. Once the seafood has cooked, mix in the alfredo sauce. When the sauce starts to bubble and is hot, it is ready to serve over pasta. Keto Mushroom Zucchini Lasagna Rolls . 😍😍 . Ingredients: 4 large zucchini thinly sliced lengthwise (I used a mandoline) 1 Tbsp olive oil for brushing + 1 additional Tablespoon for sauteing 1 small sweet yellow onion, finely diced 2 fresh garlic cloves, minced 8 oz fresh mushrooms, chopped well 1 tsp dry Italian seasoning 16 ounces high quality marinara sauce sea salt and fresh ground pepper, to taste 1/3 cup organic ricotta 1 free range egg 1/4 cup freshly grated Parmesan cheese a handful or fresh parsley, finely chopped 1/2 cup shredded mozzarella cheese .  Instructions: Preheat your oven to 375 degrees f. and line a baking tray with parchment paper. Lay out the zucchini strips on a large cutting board, lightly sprinkle with sea salt and pepper and very lightly brush with 1 Tablespoon of oil. Bake strips in your preheated oven for 10-12 minutes, or until slightly tender and easy to roll. Allow them to cool until ready to handle. Meanwhile, add remaining olive oil in a skillet over medium-high heat. Add minced garlic and cook for 1 minute, until fragrant. Add in the onions, mushrooms, Italian seasonings and cook for 4-5 minutes. Stir in 3/4 of the marinara sauce and simmer your mushroom sauce for about 4 minutes, or until slightly reduced. In a medium bowl add ricotta, parmesan cheese, the egg and a tiny pinch of sea salt + pepper, and fresh chopped parsley. Stir well to combine everything. Use a 9×13″ casserole dish or an ovenproof cast iron skillet and spread remaining marinara sauce on the bottom. To assemble the zucchini rolls, lay out one zucchini slice on a cutting board. Homemade pizza dough for dinner tonight. Recipe below 👇👇👇👇 🍕 🍕 🍕 Ingredients 1 1/4 c water 2 T olive oil 1 t salt 2 t yeast 3 1/2 c flour 🍕 Add warm water to bowl with yeast. Let proof for five minutes. Add olive oil, salt, and flour. Combine in stand mixer with dough hook on low. If too sticky, add additional flour one tablespoon at a time. Let knead seven minutes. Turn off when dough springs back a little when you poke it. Cover with a damp towel in a warm place for 30-60 minutes. After rising, remove from the bowl and divide into two equal size pieces. Use immediately for your favorite pizza recipe or store in a loosely covered container in the fridge for up to three days. To bake, add sauce and toppings, then bake at 450 degrees for 10-12 minutes, depending on how heavily you top your pizza.

Feels like FOREVER since I did a foodie post.  Tonight I did a big batch of my special homemade chilli (swipe for recipe) It goes brilliantly with rice, chips, tortillas but recently I’ve been enjoying breaking up some taco shells and using them as nachos and scooping up the chilli. Fab!!! (On ww they’re only 2sp each)  Simple Sunday Dinner! My all time fave fakeaway -Taco Fries 😍  I bulked this batch out with extra veg and a tin of kidney beans. I try to have a few choices of batch cooked meals stashed in the freezer, especially for days that Paul’s working and I’m cooking for one. NEW RECIPE! Cookie Dough Cake Pops 🍪 vegan | paleo | no bake .  We’re kicking off cake pop week with these perfectly vegan cookie dough cake pops 🙌🏼 Cookie dough taste, cake like consistency, and an easy no bake recipe! . .  INGREDIENTS ▪️ .  Cake Ingredients: ½ cup creamy nut butter (we like cashew butter but any would work here!) 3 tablespoons maple syrup ¼ teaspoon sea salt 1 teaspoon vanilla extract ¼ cup coconut flour plus 2 tablespoons extra 2 tablespoons finely chopped dark chocolate (we used our signature dark 72% cacao chocolate bar)  Extra ingredients: ½ cup chocolate melted (we used our creamy cashew milk chocolate bar) Cake pop sticks 2 tablespoons chocolate chopped .  INSTRUCTIONS ▪️ For the Cake: In a medium sized bowl, mix together the cashew butter and maple syrup. You will see this thicken up a bit. Add salt, vanilla extract, and flour. Mix again thoroughly, then add chopped chocolate. Roll into small meatball shapes and place on a tray.  Once all of the pops have been rolled, place the tray in the freezer to set up for 15 minutes. .  ASSEMBLE ▪️ Remove the tray from the fridge. Dip a pop stick into the chocolate about a 1/4″ and then place it back into the cookie dough ball halfway.  Once all of the cookie dough balls have been sticked place into the freezer for 5 minutes.  Once five minutes has passed, take the whole pop and dip it into the cashew milk chocolate.  Shake off the excess and top with some finely chopped up chocolate. Let them set up and enjoy!
