last week I meal prepped for the first time & it really helped me through my exams, where I had very little time away from the library :( I was inspired by @tessbegg ‘s black bean chilli for this dish - my KIDNEY BEAN + MUSHROOM CHILLI! it’s seriously SO delicious and nourishing, and goes down well hot or cold and topped with some fresh parsley & birds-eye chilli for some extra heat 🌶🌶 #deliciouslyconscious

Self-care Sundays made a bit easier to thanks to MMWB ✨ . Truth is, a lot of time Sundays are spent grocery shopping, meal prepping and getting ready for the week ahead, meaning it will often be Sunday night before we know it and we have barely had time to sit down, let alone practice "self-care" . We won't always have time for bubble baths, yoga or "me time" but if you have had one of "those days" where you have been rushed off your feet, this is your friendly reminder to take the next 15mins out for yourself, have a cuppa (or wine 🍷😉), take a few deep breaths and congratulate yourself for being an absolute legend!😘 . PURE is completely flavourless, odourless, heat and cold stable which makes it so easy to take! You can also add to a drink with more flavour (milk, orange juice, coffee, smoothies) or to light foods like yogurt, oatmeal or porridge!
PASTA 🍝 is probably one of my favourite foods. There’s something so comforting and satisfying about it. Like a lot of carbs, pasta’s had a bad wrap the past few years. But in all honesty pasta can continue to be a healthy part of your diet. Choose whole grain for extra fibre to slow down your digestion and keep your blood sugar stable. I love wholemeal spelt pasta the most, the nutty flavour is 👌🏽 and I always serve it with a side salad to get those veggies in.
Homemade crumbed wild caught pearch fillets 😍 these can be a little time consuming, but the end result is totally worth it! If you want to give these a go, this is what you’ll have to do: 1. Make up your crumb mixture using 3 parts almond meal, 1 part breadcrumb of your choice (I used panko crumbs this time, but have also used whole meal and rice crumbs on different occasions), a good pinch of salt and some dried Italian herbs. 2. Dust your fish fillets in some spelt flour and then pop them in an egg wash before crumbing in the almond meal mixture. 3. Place on a baking tray, lightly drizzle with some olive oil and bake at 180 until golden. It should take about 20 minutes or so. 4. Serve along side some veg or salad!
Finally made it to @hemsleyselfridges yesterday and it did not disappoint 🙌🏼 The most delicious and wholesome salads 😍 I spoke yesterday @sohohouse76and40 about the gut-brain axis and how to improve gut health 🧠 One of my main take home points was to increase dietary diversity, and one great way of doing this is to order different dishes to what you normally eat or cook, when dining out. Give it a try!
Tonight we had @thermobexta’s spinach and ricotta cannelloni and WOW it was delicious! I made my own ricotta, (see previous post) and I used fresh spinach blitzed in my Thermie instead of frozen. Do yourself a favour and buy the cookbook (more main meals made easy) and make this delicious recipe...you will love it!
Chocolate Zucchini Protein Slice 😍💜. . . Make sure you save this one guys 😍. . Ingredients: • Wholemeal self raising flour (210g) • Baking powder (5g) • Salt (5g) • Banana (300g) • Honey (30g) • Walden’s calorie free caramel sauce (70g) • Large Egg • Vanilla extract (5g) • Zucchini grated (220g - squeeze excess moisture out using a paper towel) • Coconut oil (30g) • Cacao powder (30g) • Cadbury dark choc chips (50g) • True protein chocolate flavoured (70g) . Method: 1️⃣Preheat oven to 180 degrees Celsius. Grab a cake tin and line with baking paper. 2️⃣Place all the dry ingredients into a bowl and mix through (except for the cacao, choc chips and coconut oil). 3️⃣Mash the banana in the bowl until it is smooth and not clumpy. Add the wet ingredients to the bowl and mix thoroughly, until it is of a smooth consistency. 4️⃣Lastly, add the choc chips, cacao powder and oil to the batch and mix until the batter is smooth and all one colour. Evenly distribute into the pan. 5️⃣Bake for approximately 30 minutes or until a skewer comes out clean. Set aside and let it cool. 6️⃣Serve and enjoy! . . Serves 14 🙌🏼💜.
