🌈 Day 34 of eating a rainbow I first learnt how to make a beautiful shiitake mushroom cleansing soup when I did seasonal yoga cleanses at west end. I’m currently doing a detox with my amazing mentor, @Dayna Williams, so I made this batch to keep me going! 🌈 Rainbow Vegetable and Shiitake mushroom soup INSTRUCTIONS: 2-3 cloves of garlic minced Tea spoon of Grated ginger 1 brown onion 1 cup of Cabbage 1 cup of pumpkin 2 carrots 1 head of broccoli 1 cup shiitake mushrooms (fresh) or 1/3 cup dried shiitake 1 table spoon tamari 1 table spoon rice wine vinegar INSTRUCTIONS: 1. I’m a soup saucepan bring dried shiitake and 6 cups of water to the boil for 15 mins then simmer. Set aside and remove shiitake once softened - chop and return to water 2. In a frypan, heat garlic, ginger and onion in oil 4. Add carrot, pumpkin and harder vegetables to frypan 5. Add frypan of veggies to shiitake water and cook for a further 15 mins or until vegetable are almost tender, then add broccoli and cabbage 6. Add tamari and vinegar If using fresh shiitake: Fry them after the garlic, ginger and onion become fragrant. They can be added to the boiling water, with the frypan of buggies. Fresh shiitake are a lot softer than dried shiitake so don’t need the soaking time. Dried shiitake are very flavoursome so you’ll only need 1/3 of a cup of this - sometimes 3-4 big dried mushrooms is enough.
