Coconut Banana Nice Cream and Chocolate Chip Cookies from #moreplantslesswaste. This is a very indulgent dessert with thick, crumbly cookies, a sweet coconut and banana nice cream and a chocolate coating. This is quite a filling dessert which you can make room for whilst waiting because there are a few steps involved and you have to chill or freeze after each step. The end result is worth it though. The cookies are a bit sturdier and more dry than other cookies that we usually make but it helps to hold up the sandwiches. We used a whole wheat spelt flour so that may have contributed to it too, but it was delicious nonetheless. Plant a goddamn Tree 🌍💚 Este finde tenia la misión clara de plantar un árbol. Llegamos al centro de jardiería, pensé que con esto de que en Holanda son muy del rollo sostenible tendrían el tipico kit del #activista 😂 Obviamente no fue así y la unica opción que había eran unos almendros de dos metros de alto y bastante pesados, complicado de transportar en las bicicletas 🙄 Al final terminamos con unas semilla de zanahoria, cebollas y habas, y unas plantitas para casa, tan felices 😂 Por mucho que queramos simplificar las cosas, Esta misión de intentar tener un impacto lo menos negativo posible, a veces no es tan sencillo, tiene su proceso (y cada persona las procesa diferente) requieren acción y educación, aunque sólo sea un poco. Cuanto más leo, más me fascina y más me doy cuenta de lo poquito que sé y de todo lo que me queda por aprender. WHAT HAPPENS TO ALL THE LEFTOVERS? Exclusive recipe from my book pg.101 #moreplantslesswaste >Link in bio< 🌱SERVES 4-6 tbsp olive oil 1 onion, finely chopped 3 garlic cloves, minced 1 aubergine, chopped 500g tomatoes, diced or crushed 350g dried cannellini beans, soaked overnight then cooked (see page 160 for how to cook them) 2 tsp paprika 1 tsp ground cumin 1 tsp dried oregano pinch of dried chill flakes (optional) 120ml home-made vegetable stock (see page 176) bunch of kale, chopped salt and pepper 🌱To serve: Small bunch of parsley (stems and leaves), chopped Leftover bread, toasted Warm the olive oil in a large frying pan over a medium heat, add the onion and fry until translucent, then add your garlic and cook until fragrant. Now add the aubergine, tomatoes, beans, paprika, cumin, oregano and some salt and pepper – you can even spice it up a bit with some chilli flakes. Stir and combine until it starts to simmer. Simmer for 2 minutes, then add the stock, reduce the heat to a very slow simmer, cover with a lid and cook for 10 minutes. Add the kale and cook for 5 minutes, or until wilted. Check that the aubergine is soft, then remove the pan from the heat, sprinkle over the chopped parsley and serve with toasted leftover bread to soak up the juices. Enjoy!
Here’s a peak at our September Better Read Cooks road test - a very scrumptious Roast Potato Bruchetta from Max La Manna's new book, ‘More Plants Less Waste’. Max focuses on cooking with more veg and using all parts of those veg where possible – hey presto, vegan nose-to-tail eating! I would never have thought to try using roasted potato as a bruschetta base, but oh lordy, does it work! The potato is sliced thickly, coated in olive oil, seasoned with salt, pepper and a touch of smoked paprika, then roasted until golden. This pretty much ticks my culinary boxes already, but then the slices are topped with chopped cherry tomatoes, garlic, avocado and basil, then dressed with lemon juice, balsamic and a little more salt and pepper. All I can say that this is an absolute revelation – the topping is fresh with the sweetness and tang of the tomato and is complimented by the creaminess of the avocado and soft potato interior ... a perfect expression of Spring on a plate. #2 of lunch box series. I know it's a Friday night and so inspiration isn't necessarily needed as many will have the weekend off. However, I thought I'd share this fairly simple rice recipe that I took for my lunch a couple of days this week. This week has been long. It was my seccond week back at school in 6th form and after almost 3 months off, it was a bit of a shock to the system so now I am utterly exhausted and looking forward to the weekend. #deats In a pan, with a little oil, fry 1 red pepper, 1 red onion, some chopped carrot, and some broccoli stalks, until almost softened. Then add in some frozen peas, edamame beans, and some broccoli florets with a handful of spinach and chili flakes*. Stir in some pre-cooked rice and heat through until piping hot. Leave to cool, then serve with sweet chili sauce and tamari. *The veggies can be changed in this recipe but this is what we had and needed using up.
