It would be remiss of me to go through my epic culinary journey without actually giving due honor to the most important influences in my culinary formation: Mom and Dad. It was because of you that I learned from an early age that it was important for food to taste balanced and that every dish could benefit from acid, salt, spice, and sweetness. It was because of you that I grew up not only on hamburgers and pizza, but on larb and mei chai kou rou and moo satay and rad na. It was because of you that I developed a joy, passion, and satisfaction bargain hunting for good deals on groceries. It was because of you that I developed a foundation of understanding for what good food was, and honed the palette that serves me today as my greatest strength as a chef. But more than all of those things, it's thanks to you that I never knew want - not only did you provide for my physical need for shelter and sustenance, but I was always spoiled by your home cooking. Thank you, I love you, and even if I'm not great at showing it, I will be forever grateful for you. For a long time I was really reticent to post a picture of anything that wasn't a dish I made myself. Quicked pickled peppers are so easy to make and delicious on everything 🌶 4-6 hot peppers of your choice, sliced 1/2 cup water 1/4 cup white wine vinegar 1/4 cup white vinegar 2 tablespoons sugar 2-3 clives garlic, peeled and smashed Bring water, vinegars, sugar, and garlic to a boil. Add peppers stir and cook for 2 min. Turn off heat, let cool and refridgerate for an hour before serving. Store in refrigerator in a sealed jar. That's it!!
