🍫 KETO COFFEE CHEESECAKE (NO BAKE)🍰 😄 - #ketocheesecake 👇 Need Help With Your Keto? --> Click the link in the BIO 👆 Follow👉 @keto.menu.center 👈for more⠀ Ingredients: Crust 3/4 cup shredded coconut unsweetened 1/4 cup cocoa powder unsweetened 1/2 cup sunflower seeds unsalted raw 1/4 cup Swerve sweetener 1/4 tsp salt 4 tbsp butter room temp Filling 3/4 cup strong brewed hot coffee 2.5 teaspoons gelatin 16 ounces cream cheese, room temp 2 tsp coffee extract 2 tsp vanilla liquid stevia 1/4 tsp salt 1 cup heavy whipping cream Topping 2 ounces 85 % dark chocolate 1 tbsp coconut oil - Instructions Place coconut and sunflower seeds into food processor and blend until ground well. Add the rest of the crust ingredients into food processor and process until smooth. Press crust mixture with hands onto the bottom of an 8 inch spring form pan. Set aside. Pour hot brewed coffee into a bowl or cup. Pour in gelatin and stir until dissolved. Set aside to come to room temperature. Add cream cheese into a stand mixer and blend on high until smooth. Add the cooled coffee and gelatin, extract, stevia and salt. Blend on high until incorporated. Pour in the heavy whipping cream and blend on high until mixture looks whipped and thickened about 5 minutes. Pour onto crust in pan. Refrigerate for 3 hours or overnight. 10 minute Shrimp 🍤🍤 “Shred” Bowl. . If there’s anything I hope to prove here its: 1) “diet” food doesn’t have to be boring & 2) you can make something super delicious in less time than it takes to drive to a fast food joint. . This bad boy takes 10 mins start to finish & loaded with all the goods - spicy shrimp, asparagus, egg, sweet bloobs, & greens. . Here’s how I made it: . 1.I start with eggs... get a pot of boiling water, add your eggs in, set timer for 8 mins, and set aside a bowl with ice water. After 8 mins, immediately put the egg in the ice water to stop the cooking. . 2.While the egg is boiling, put a pan on medium heat. Grab some wild raw shrimp and dab with paper towel to absorbe all water/moisture prior to seasoning. This will help cook it better. . 3.Drizzle olive oil on your shrimp then add 1 tsp sea salt, pepper, chili powder, and whatever else you like. . 4.To your pan, add 2 tsp minced garlic and 1 tablespoon olive oil then add shrimp and cook for about 1.5 minutes on each side . 5.While the shrimp is going, grab a bowl and fill with your favorite greens. I used some @josiesorganics arugula as my base. Then added some fresh blueberries and some leftover asparagus from last night that I had just sautéed with garlic powder, sea salt, and olive oil. . 6.Remove your egg from the icebath, crack, slice in half, and top with some sea salt and pepper then add to the bowl along with the shrimp. . 7.Add your favorite dressing. I went with a simple lemon mustard dressing I made by mixing 1/2 tablespoon mustard, 1 tablespoon lemon juice, 1 tablespoon olive oil, sea salt and pepper. You can increase or decrease any of these based on your personal preferences. . 8.Devour! . What’s your favorite way to add protein to your salads?
