Taco Bowls  2 cups veg: 1 cup lettuce + 1 cup tomatoes & onions + 1/2 stir-fried bell pepper  4-5oz protein: 4oz grilled chicken - I like Trader Joe’s pre-grilled!  100-200 calories of fats: 1/3 cup shredded cheese Just triple or quadruple the recipe if you’re making for a few days 🤩🙌🏼 Season with basil, oregano 🌿 salt & pepper if you like .  Zoodles & Meatballs 🍝 2 cups veggies: 2 cups zucchini noodles - I made them from frozen pre-zoodled zoodles 🧀 100-200 calories of fats: 1/3 cup feta cheese & 1 yogurt for some extra protein on the side 🍗 4-5oz protein: 5 turkey meatballs - made from frozen! 🌱 Seasoned with basil, oregano, salt & pepper . Every rep, every set and every workout I’ve finished.  Every prep of those boring repetitive meals. Every piece of chicken or lean ground meat I’ve ate instead of something I’ve craved.  And you know what else counts? 30-15=15! That’s the bodyfat percentage I’ve lost in a year. I went from obese to fitness on the fat percentage chart and I am so proud of myself! My hard work, my consistency, discipline, dedication and sacrifice payed of. Instead of feeling sorry for myself I did what had to be done. I stfu and lifted! I rebuild a body that was destroyed from the trauma of childbirth. I rehabilitated myself from not being able to walk to squatting almost double my own body weight. I built myself up one step at the time while being a mother to an infant!  I cried, I screamed, I felt hopeless and I wanted to give up a million times. I hit plateaus, I injured myself, I fought postpartum depression and the immense grief of losing my brother. I went through it all! But I didn’t give up! The other night made this Parmesan crusted Wild Haddock with homemade roasted Tomatoes sauce with tomatoes sourced from my garden that morning.  For the fish I used a mix of almond flour, shredded Parmesan, Parmesan @whispssnacks crackers and @traderjoes onion salt.  Dipped into a mix of egg with a little heavy cream and baked on parchment paper for 40 minutes at 400.  The sauce is one I have been making a long time if you been watching me for awhile and will make several times now that my tomatoes are ripening. Sliced and roasted on a sheet pan with onion, garlic, fresh herbs, sea salt, fresh ground pepper and lots of organic olive oil. Then blended up and simmered in my #lecreuset. 🌟Cauliflower Crust Meat Pizza🌟  This was my first attempt at Keto Pizza. It was amazing and I couldn’t tell the difference once I’d loaded the toppings (spicy chicken, chorizo, mushroom and blue cheese). BUT the curst would have toke a while to make so not a practical meal when your limited on time.....I toke a short cut and used frozen cauliflower rice. It saved a lot of time. On Saturday I fit in and bought two different brands of SIZE FOUR (4⃣!!) jeans. Ironically, that size is actually called a 27 in both Hudson (pictured) and Banana Republic; just let me say 4, damnit! 😂⁣ .⁣ Never in my wildest dreams would I have thought I’d be wearing this size, but here I am living it because I believed in myself enough to never give up. A goal of mine in 2019 is simply to help even just one person realize that they can do it too, and that they are worth the fight. You’re never too big, too old, or too far gone to save your life. It doesn’t matter how many times you have tried and failed in the past; all that matters is that you get back up and try again until you don’t fall down anymore. Fall down 7 times, get up 8!⁣ .⁣ My most frequently asked question is if I have loose skin. YES, I have quite a lot all over my body; you can see a tiny bit of it that isn’t tucked into my jeans. One day I’ll be comfortable enough to “bare all” and show everyone, but that’s not today. Don’t let the fear of some skin stop you from getting healthy!! Simply brown the beef and add the garlic, oregano and pasta sauce and allow to simmer till thickened. . Combine the eggs and mozzarella and beat with a fork till combined. . Add beef mixture to a baking dish and cover with egg and cheese mixture then top with pepperoni. . Bake in a fan forced oven at 180’C/350’F for 30 minutes or until top is golden, gooey, and crispy!. .
