Protein packed ‘Egg Muffins’ for when you are on the go. Lunch box filler or post gym work out snack, you choose, they are delicious and so easy to make. Get creative with the ingredients, use left over roast vegetables, a variety of different cheeses and herbs. See recipe below: . . . Egg Breakfast Muffins . Ingredients (makes 12 muffins) 3/4 cup bbq chicken (or bacon) 6 mushrooms  4 shallots 6 cherry tomatoes 2 tablespoons pine nuts Large handful of baby spinach leaves 2 stalks continental parsley  1-2 tablespoons olive oil 100g danish feta Salt/pepper  8 eggs Butter/coconut oil . . Method  1. Prep all the elements. Roughly chop mushrooms into small pieces, thinly slice shallots, remove parsley leaves 3. Chop cooked chicken into small pieces  4. Slice tomatoes in half 5. Beat eggs in a pouring jug (season with salt) 6. Using a dry frypan toast pine nuts for a few minutes. Remove to a bowl once golden 7. Using the same pan, heat olive oil and add shallots, cooking for a few minutes on medium heat 8. Add mushrooms and bacon if using. Cook tossing until golden. 9. Stir through spinach until wilted and pine nuts. 10. Season lightly with salt/pepper 11. Combine chicken/bacon in the mix. 12. Remove from the heat and allow to cool 13. Preheat oven to 200 deg 14. Grease a cupcake tin with butter or coconut oil 15. Spoon in spinach/mushroom mixture, dividing evenly. 16. Top with half a tomato, a few parsley leaves, a crumble of feta 17. Finally pour in beaten eggs  18. Who has used buckwheat in baking before? πŸ™‹‍♀️ They are a great addition to these energy bites for some crunch!  Here's the recipe: 2 cups pitted dates (soaked in hot water for 30 minutes) + 1 1/2 cups oats + 1/2 shredded coconut + 1 tsp vanilla + 2 tbsp coconut cream + 1 cup toasted buckwheat. Add all ingredients except buckwheat in a food processor until mixed. Shape into balls and roll in the buckwheat. Enjoy!

No hay ninguno que lo supere, todos caen en la repetición. • • I N G R E D I E N T E S 2 tazas harina con polvos de hornear 1 taza azúcar 1/2 taza aceite de canola, maravilla o vegetal 1/2 taza leche de almendras  Extracto de Vainilla 500 gr de berries (frambuesas, frutillas, arándanos...frescos o congelados) Azucar rubia para arriba P R E P A R A C I Ó N 1. Hacer la masa uniendo lo seco; Harina y azúcar en un bowl y luego agregar los húmedos; Aceite, leche, y vainilla. Mezclar bien hasta formar una masa homogénea. Dejar reposar en el refrigerador unos 15 minutos. 2. Agregar un poco de azúcar rubia a las berries.  3. Rociar aceite spray en un molde y poner 2/3 de la masa. Sobre esta las berries. Ir poniendo pedacitos del tercio de masa restante hasta cubrir la parte superior. Se facilita si agarras un poco de masa (tamaño de una pelota de ping pong), la presionas en la misma palma de la mano, y cubres las berries. Espolvorear un poco de azúcar rubia arriba. 3.
