We have this strange notion in our country that if you can’t afford Whole Foods might as well eat junk food. Many people think that it costs an arm and a leg to eat healthy and while it might take a bit more time and effort eating healthy on a budget is very doable. A bag of frozen salmon-8$, frozen cauliflower rice-2$,spicy mayo-5$ and garlic-2$=17$. While this may seem like a lot to some but all of this gives you multiple servings meaning multiple meals. To save even more money get a big ol bag of actual rice. The key to avoid being bored with the food is in the flavor. Chili Garlic Baked Tofu 1 block tofu, drained and pressed for at least an hour** 2 tbsp soy sauce 1 tbsp nutritional yeast 2 tsp chili garlic sauce ❤️ . Set oven to 400F. After pressing tofu, cut tofu into even cubes and place in a Tupperware container. Add remaining ingredients, seal container and gently shake contents to evenly coat tofu. Remove tofu and place on a lined baking sheet making sure tofu cubes aren’t touching. Place in oven for at least 25 minutes or until edges have browned. Remove from oven and serve as desired. 👌🏽 . ** Either use a tofu press or wrap tofu in a clean towel and set a heavy object over it to remove excess water from tofu. You can also use prepressed tofu, usually you find it vacuum sealed and called super firm tofu. 🤗 . 🇬🇧 Brunch time ⌚ 🍲 Egg muffin with gluten free bread, avocado dressing and leftovers from making the egg muffins. Originally I made the avocado dressing for pasta but then I just changed my mind. «Картофельно-сырные лепешки» . 📌1кг картофеля 📌500гр творога 5% 📌200гр сыра(у меня моцарелла) 📌5 яиц 📌100мл сметаны 15% 📌150гр-200гр муки 📌соль по вкусу 📌сливочное масло для смазывания . Картофель отварить в мундире и натереть на тёрке. Сыр тоже натереть на тёрке. Соединить все ингредиенты,кроме муки, и хорошенько перемешать. Затем добавить муку и замесить податливое не упругое тесто. Количество муки приблизительное. Смотрите сами,тесто не должно быть сильно плотным. Разделить тесто на 15-20 частей(в зависимости от того,какого диаметра у Вас будут лепёшки). тесто получается липкое,поэтому для раскатки используйте муку. This month has been filled with many fun weekend trips💕 So My goal is not to loose weight but maintain. I was a little nervous for todays weigh-in because I thought my numbers would go up to the 190s, but staying consistent throughout the week has helped me stay under 187 (which is the number im trying to stay under for the month of September) This morning I weighed myself and was at 183!!! Im super excited!! Strawberries & (coconut) Cream Truffles by @themindfulhapa  Headover to her page for loads of deliciously healthy recipes! #recipe 👇 ➕➕INGREDIENTS ¾ cup freeze-dried strawberries  ½ cup Medjool dates, pitted (~6-8 dates) ¾ cup almond flour ¼ cup cashew butter 1 tsp vanilla extract 2 tbsp coconut cream (or top part of a full fat can of coconut milk) . Coating 1 85% dark chocolate bar, roughly chopped 1 tbsp coconut oil . ⏩⏩Instructions  1. Start by making your truffles. In a food processor, blend freeze-dried strawberries until fine/powder-like consistency is reached.  2. Add in the pitted Medjool dates until they form into a ball (~1 minute). 3. Next, add in your remaining ingredients for the truffles - almond flour, cashew butter, vanilla extract, and coconut cream. Blend until combined and you reach a smooth consistency (1-2 minutes). 4. Remove dough from food processor and roll into ~14 - 15  balls. Move to the freezer to harden for 15 - 20 minutes. 5. Make your chocolate coating. Combine your chopped choc bar and coconut oil in a microwave-safe bowl and microwave in 30-second intervals until chocolate has melted.  6. Dip each frozen truffle into the melted choc mix, making sure they are completely coated. Move back to the freezer to let chocolate set/harden, an additional 5 - 10 minutes.  7. Store in fridge or freezer for longer-term storage. Wednesday ending means we are over half way to the weekend! ⁣ ⁣ Hey guys! Here is my supper post for today. We had shrimp scampi with linguini (9 old SP and soooo yum) and boiled broccoli with cauliflower that I poured a bit of soy sauce on. Not pictured is the two pieces of sushi I had that a friend made for me. I counted 2 old SP for those. ⁣ ⁣ So I’m a little pumped for tomorrow. It’s going to be my monthly off plan day and it will be the first time I’m not limiting myself to only one meal. I’m going to have Timmies for breakfast, a normal lunch probably and then my boyfriend and I are going to supper with his sister and her boyfriend so I’ll let myself pick whatever I want there. another scrumptious version of veggie sliders! 😜🙌🏻 all vegan and gluten free!  dEATS~ @traderjoes Foursome Medley with corn, peas,carrots, and green beans Bell pepper strips 2 @drpraegers California Style veggie burgers @missionfoodsus Gluten free mini street corn tortillas  @followyourheart Mozzarella shreds @fieldroast Tomato cayenne slices  @traderjoes Green goddess dressing  How to make~ Super simple. I just sauteed all of the veggies together, cooked the veggie patties on a skillet, and then tossed all everything together in a pot to mash up. Side note: I wanna try baking some veggies to switch it up, I’ll def be posting something on that;) but anyways, then I heated up the tortillas quickly on the same skillet I used for the patties. I poured TJ’s Green Goddess dressing on each of the tortillas and then scooped up the mash to put inside. Topped off with the parmesan and tomato cayenne. I LOVE @followyourheart options, they’re my favorite brand I’ve tried out so far for veg cheese. So healthy and tasty! This meal was BOMB and I was clearly really hungry because I ended up diving in for seconds. I LOVE tacos and they’re so fun to create, recreate, tweak, basically what I’m trying to say is they are fun asf to make! Ladies and Gents, plant based tacos are IT. Yup. I’m sold.  Okay I’m dead tired and I need to turn in for the night. I should already be asleep tbh. It’s been a long day, and these past few days I’ve felt wayyyy more tired than usual. I don’t think I’m getting sick or anything along those lines but MAN I feel like I could pass out at any second. I also have my second exam in exercise physiology tomorrow afternoon so even more reason for me to sleep early. I love you guys, talk soon! 早上為了補眠太晚起床做早餐,做到許先生沒時間吃,於是當了富胖達送去店裡給他當午餐, 他店裡的客人看到以為是餐廳,又說回家也要自己做,我跟他說請跟客人說追蹤許太太追起來好嗎🤣  今天試試上次去法蘭克肉舖子買的豬排, 好吃好吃~肉也很嫩再抹上花生醬根本超完美🤤 今天我覺得很無技巧,唯一就是甜椒盅吧!! 所以底下的食譜就來分享甜椒盅好了,本來不愛吃甜椒的小朋友應該都要變得喜歡吃甜椒了🤣   📝小朋友討厭甜椒盅  ▪️早午餐🍽 2人份材料  ▫️甜椒  2顆 ▫️快樂牛低脂起司片 2片 ▫️乳酪絲  適量 ▫️花椰菜  適量  ▫️低脂培根  2片 ▫️洋菇  4朵 ▫️蔥  少許 ▫️雞蛋  3顆 ▫️濃豆漿  少許  🔍旁邊兩顆芋泥作法 (上一篇其實已經分享過,怕有人不知道😭)  🥣芋泥準備材料 ▫️芋頭  300g  🧂調味料 ▫️無鹽奶油  15g ▫️代糖  0.8~1g   🍳芋泥-烹調方式 1.首先準備一個碗公,300g切塊芋頭(超市購入)放入碗中,再放進電鍋,外鍋放入1杯水,等待電鍋跳起來之後,趁熱放近無鹽奶油跟代糖均勻攪拌壓泥(如果要加蜂蜜等東西,也在這個時候加入),全部壓泥後再加入濃豆漿(我的豆漿量約250~300cc),均勻混合攪拌,芋泥就完成了✅   🍳甜椒盅-烹調方式 1.花椰菜切小塊,培根切丁、洋菇切片,蔥切段(蔥花)備用。  2.用碗公把蛋打散,加入培根、洋菇、蔥段(蔥花)、乳酪絲,全部一起平均倒入甜椒裡,甜椒剩餘的空間倒入濃豆漿在稍微攪拌(怕蛋烤出來太乾),最上層鋪上一片起司片,進烤箱烤210度20分鐘就完成囉✅  📌注意事項 ⚠️甜椒越大顆要烤的時間就越久唷。
