Chili Garlic Baked Tofu 1 block tofu, drained and pressed for at least an hour** 2 tbsp soy sauce 1 tbsp nutritional yeast 2 tsp chili garlic sauce ❤️ . Set oven to 400F. After pressing tofu, cut tofu into even cubes and place in a Tupperware container. Add remaining ingredients, seal container and gently shake contents to evenly coat tofu. Remove tofu and place on a lined baking sheet making sure tofu cubes aren’t touching. Place in oven for at least 25 minutes or until edges have browned. Remove from oven and serve as desired. 👌🏽 . ** Either use a tofu press or wrap tofu in a clean towel and set a heavy object over it to remove excess water from tofu. You can also use prepressed tofu, usually you find it vacuum sealed and called super firm tofu. 🤗 . 🇬🇧 Brunch time ⌚ 🍲 Egg muffin with gluten free bread, avocado dressing and leftovers from making the egg muffins. Originally I made the avocado dressing for pasta but then I just changed my mind. Suddenly I wasn't in the mood for paste so it ended up on my bread. 😅. 🇭🇺 Reggeli ebéd 🥣 🍲 Tojásos muffin gluténmentes kenyérrel, avokádó krémmel és a tojásos muffin alapanyagainak maradékával. Strawberries & (coconut) Cream Truffles by @themindfulhapa Headover to her page for loads of deliciously healthy recipes! #recipe 👇 ➕➕INGREDIENTS ¾ cup freeze-dried strawberries ½ cup Medjool dates, pitted (~6-8 dates) ¾ cup almond flour ¼ cup cashew butter 1 tsp vanilla extract 2 tbsp coconut cream (or top part of a full fat can of coconut milk) . Coating 1 85% dark chocolate bar, roughly chopped 1 tbsp coconut oil . ⏩⏩Instructions 1. Start by making your truffles. In a food processor, blend freeze-dried strawberries until fine/powder-like consistency is reached. 2. Add in the pitted Medjool dates until they form into a ball (~1 minute). 3. Next, add in your remaining ingredients for the truffles - almond flour, cashew butter, vanilla extract, and coconut cream. Blend until combined and you reach a smooth consistency (1-2 minutes). 4. Remove dough from food processor and roll into ~14 - 15 balls. Move to the freezer to harden for 15 - 20 minutes. 5. Make your chocolate coating. Combine your chopped choc bar and coconut oil in a microwave-safe bowl and microwave in 30-second intervals until chocolate has melted. 6. Dip each frozen truffle into the melted choc mix, making sure they are completely coated. Move back to the freezer to let chocolate set/harden, an additional 5 - 10 minutes. 7. Store in fridge or freezer for longer-term storage. Wednesday ending means we are over half way to the weekend! Hey guys! Here is my supper post for today. We had shrimp scampi with linguini (9 old SP and soooo yum) and boiled broccoli with cauliflower that I poured a bit of soy sauce on. Not pictured is the two pieces of sushi I had that a friend made for me. I counted 2 old SP for those. So I’m a little pumped for tomorrow. It’s going to be my monthly off plan day and it will be the first time I’m not limiting myself to only one meal. I’m going to have Timmies for breakfast, a normal lunch probably and then my boyfriend and I are going to supper with his sister and her boyfriend so I’ll let myself pick whatever I want there. Otherwise I’ll try and keep snacks to a minimum and try to pick fruit if I do want a snack. I just sauteed all of the veggies together, cooked the veggie patties on a skillet, and then tossed all everything together in a pot to mash up. Side note: I wanna try baking some veggies to switch it up, I’ll def be posting something on that;) but anyways, then I heated up the tortillas quickly on the same skillet I used for the patties. I poured TJ’s Green Goddess dressing on each of the tortillas and then scooped up the mash to put inside. Topped off with the parmesan and tomato cayenne. I LOVE @followyourheart options, they’re my favorite brand I’ve tried out so far for veg cheese. So healthy and tasty! This meal was BOMB and I was clearly really hungry because I ended up diving in for seconds. I LOVE tacos and they’re so fun to create, recreate, tweak, basically what I’m trying to say is they are fun asf to make! Ladies and Gents, plant based tacos are IT. Yup. I’m sold. Okay I’m dead tired and I need to turn in for the night. I should already be asleep tbh. It’s been a long day, and these past few days I’ve felt wayyyy more tired than usual. I don’t think I’m getting sick or anything along those lines but MAN I feel like I could pass out at any second. I also have my second exam in exercise physiology tomorrow afternoon so even more reason for me to sleep early. I love you guys, talk soon!
