We love eating pasta the traditional way, but we also love a modern twist, making up new sauces and creating new combinations!⁠ ⁠ While Ragu is the traditional companion to Pappardellle all'Uovo, this delicious sauce by @waitroseandpartners will make a wonderful Pappardelle dish. We have made a couple of changes to the original to make it #glutenfree.⁠ ⁠ Pappardelle with Ligurian Walnut Sauce⁠ ⁠ Ingredients (Serves 2-4):⁠ ⁠ •  1 pack of 250g Difatti Gluten Free Pappardelle all'Uovo⁠ •  25g coarse gluten free bread, crusts removed⁠ •  100g shelled walnuts⁠ •  1 clove garlic, sliced⁠ •  75ml olive oil⁠ •  142ml carton double cream⁠ •  50g Parmesan, grated⁠ •  20g pack flat leaf parsley⁠ ⁠ Method:⁠ 1.  Soak the bread in a little water for 10 minutes or so, then squeeze out the excess water. Put the bread into a mortar or a food processor with the walnuts and garlic and pound or blend to a purée. Stir in the olive oil, cream and Parmesan and season with salt and pepper. You should have a thick, creamy sauce.⁠ ⁠ 2.  Cook the pappardelle in plenty of boiling salted water. Chop the parsley coarsely (leaves only; keep the stalks for stock). Mix 4 tbsp of the pasta cooking water with the sauce. Drain the pasta, toss with the sauce and the parsley and serve with extra Parmesan.⁠ ⁠ And presto! This week I decided to go back to an old classic, because I just needed something that I could whip up in a half hour and enjoy right away. • This pesto chicken is one to add to your repertoire—although I must admit it’s not dairy free (but I usually do ok with this small amount). All you do is put the chicken in the pan and top with a jar of pesto. Spread it evenly and then sprinkle with halved grape tomatoes. Bake at 375 for 25-30 minutes. I like to make it with quinoa and spread some of the extra pesto juices on it for flavor at the end. Easy meal inspiration! Tofu scramble with veggies🌟For this scramble, I sautéed summer squash then added crumbled tofu (just squish with your hands), kale and cherry tomatoes. Toss in pan and heat through with garlic, pink salt, turmeric and an herb blend. I also added nutritional yeast and some vegan mozzarella✨
Leftover pasta bake and a smoothie bowl (there is more veg under all that pasta I swear. Also the pasta is gluten free and there is loads of @asda vegan cheddar in there, you just can't see it cause it's flipped upside down 🙃). Smoothie is just equal parts of frozen mango, pineapple, berries and banana with almond milk. I've been having those vegan one-pots from @aldiuk for lunch and they've been lovely (no pictures cause I've been on training). One of my favorite ways to get omega 3 fatty acids is making wild salmon cakes! A batch to last the work week + this salad I made for lunch on Sunday mid-meal prep took all of 20 minutes and was super simple to make. Lots of colorful plants and variety, healthy fat, high-quality protein, and some fermented foods is a winning combo for any salad or meal! 👌🏻💥🌈🌿 . . SALMON CAKES Makes about 7-8 cakes, depending on size // Two 7.5 cans of wild salmon, liquid drained  2 large eggs 4-5 collard green leaves, chiffonaded then chopped 1 shallot, minced 1-2 garlic cloves, minced 1-2Tbsp Dijon 2-3Tbsp @stockandspice Gulf of Maine seasoning (can also use Old Bay) 1/2tsp spicy paprika  Almond meal Fresh ground pepper to taste *the seasoning contains salt but you can add more if you want or if your seasoning blend doesn’t contain salt* Coconut or avocado oil // Heat 2tsp of oil over medium heat. Sauté the collards and shallots until soft, about 5 minutes. Add the garlic for the last minute or so. // In a bowl, add the salmon, eggs, seasonings and Dijon. Add the collards mixture and combine. // Add enough almond meal until you have slightly wet cakes that you’re still able to shape and handle, maybe 2-3 spoonfuls of almond meal. Make sure everything is mixed together well before forming the cakes. // Heat 2T oil in a large skillet over medium heat. Cook 4 cakes at a time for 3-5 minutes or until nicely browned, then flip and repeat on the other side. // Add another 2T oil and repeat with the remaining cakes, making sure to turn down the heat if the oil starts to smoke!!🙅🏻‍♀️ // #rootdownnutrition #avleats #healthyfats #brainfood #glutenfree #dairyfree #worklunch

This is what community looks like!⁣ ⁣ Last week we opened the doors to our home (yes, our actual home) and hosted a private tasting event to try out our new food and drinks menu - and we haven't stopped beaming since. ⁣ ⁣ It was our first time doing an in-house drinks menu and it was the first outing of many dishes we've been working on since the beginning of the year, so we were really keen to get honest feedback. And the verdict: 👌🏾⁣ ⁣ But the beauty of the event went far beyond the menu. We're building a community one #chopchatchill at a time and what we loved about last week - and why we started Chuku's - was the opportunity to bring people together. Guests who didn't know each other previously built relationships over the dinner table, sharing not just food, but laughter and love too.⁣ ⁣ The one small drawback for us, we couldn't share this moment with more of you. Unfortunately, our home just isn't big enough. But when we open our own proper restaurant site, you know you'll all be invited. And we can't wait!

PAN SIN GLUTEN EN 🏠🥳!!! . MANOS A LA MASA👩🏻‍🍳: ▪️420 gr de Harina para pan blanco @glutenzero.bio ▪️100 gr de Harina de Arroz ▪️14 gr de levadura fresca ▪️2 cucharadas soperas de aceite de oliva ▪️Sal ▪️500 ml de agua templada ▪️1 bolsa para hornear (hacendado). 1️⃣En un vaso ponemos la levadura y añadimos un poco de los ml de agua preparados hasta disolver. 2️⃣En un bol ponemos las harinas con un hueco en el centro. En él añadimos la levadura diluida, el resto del agua y el aceite. Movemos con espatula y añadimos una pizca de sal. Movemos y homogeneizamos la masa. Dejamos levar con un paño (mín 1h). Pasada la hora, amasamos el pan y formamos una bola. Hacemos dos cortes en la superficie y la metemos en la bolsa de hornear ya embadurnada de aceite. Cerramos, y al horno 50 min calor arriba/abajo sin precalentar. Sacamos, dejamos enfriar 100% y cortamos. . Probadlo y me contais😍. TOFU CAULIFLOWER FRIED RICE🤩🥢 - I made this for dinner last and my mind was BLOWN. I wanted to switch it up and make something new so I went for a healthier version of fried rice. I loooove tofu and this def satisfied my craving for it😋 Super fast, easy and made all in one pan!! - deats: ☆ extra firm tofu ☆ sugar snap peas ☆ mushrooms ☆ @traderjoes frozen cauliflower fried rice ☆ coconut aminos ☆ garlic powder ☆ salt & pepper ☆ dash of EBTB - Cut the tofu into around 1/2 inch slices. Then I placed it into a pan with coconut aminos, garlic powder, s&p and pan seared it on both sides. Once the tofu was browned, I took them out and added the sugar snap peas and mushrooms into the same pan with some water to sauté them. Yummy gluten free pasta salad with Rocket. I love this and super quick to make. This is vegan too. I sauté of some leeks, pepper and garlic and toss it through the cooked pasta with some peppery olive oil, salt and pepper and add a generous amount of rocket that wilts into the pasta. Great hit of flavour and quick and easy to do. Delicious.  If you like a bit of creaminess you can always add a teaspoon of vegan mayo from @followyourheart .
