Just picked up some more fresh local corn on the way home from the beach...probably the last corn of the season. 😭😭 I plan to soak up the last couple weeks of summer...and you know these Corn and Zucchini Fritters with Thyme are on the meal plan.  With simple, healthy ingredients, these guys are fast, easy, and gluten free thanks to almond flour (but regular ole all-purpose flour works, too). ❤️❤️ Hope y’all had a great weekend!

Getting back to eating meals not from the freezer with simple lunches like this. Maybe you spent a vacation drinking all the craft beer and eating all the seafood like me. ⁣ 🎂Maybe you have a birthday party coming up and you want to balance out the cake and ice cream with lighter meals earlier in the day or week.⁣ ☺Sometimes your goal will be to relax and enjoy delicious food without thinking about calories or macros at all.⁣ All of these reasons are valid and one thing holds true: you should never feel ashamed about what you eat.⁣ 👍🏼I know that seems crazy because it is very common and very easy to lose control around food. To binge and to stress eat.⁣ ✨However, shame is a useless emotion that serves no real purpose.⁣ Instead, use the next opportunity to choose food that makes you feel good and serves your goals.⁣ .⁣ 😋I definitely served my goal of enjoying my vacation eating all of the foods I've missed from the East Coast including fried clams, fish and chips, and donair with garlic cheese fingers (craving for life!). ⁣ 🏡Now that I'm back home, I am choosing foods like chicken salad lettuce wraps, that make me feel physically good and fuel my workouts. Keto Egg Loaf French Toast Sticks! My first time making them. There are tons of variations floating around the IG. I realized after I pulled all my ingredients that I only had 4 eggs (my 15yo is currently obsessed with making fried eggs and apparently went pretty hard on them this week), so I made a 1/2 batch and divided it between two small dishes. This should make 4 servings. To make a full loaf, double this. ——- 4 Tbs butter 4 oz cream cheese 4 eggs 1/2 tsp baking powder 1 Tbs coconut flour Opt: flavoring extract of your choice, cinnamon, etc.  1. Don’t be like me. Actually let your ingredients come to room temp or at least soften. I’m impatient and always regret it.  2. Cream together butter and cream cheese well.  3. A good baker would probably beat the eggs separately, but I just dumped all my remaining ingredients in the stand mixer with the butter/cream cheese mixture then beat on top speed until it was all mixed together.  4. Pour in dish(es) lined with parchment paper (I spray mine with avocado oil first to hold the parchment in place). 5. Bake at 350 degrees for 30-40 minutes or until golden and set (since I used smaller dishes mine were done in 25 minutes). 6. Remove and cool. Slice into strips.  7. Brown in butter. Mmmm.  8. Top how you choose! I did confectioners @swervesweetie and @lakantosweetener Maple Flavor syrup, but whipped cream, fruit or nuts would be yummy, too.  Enjoy! - L 🥚🍞🥞

Today, I conquered: An hour long workout that pushed my limits.  The ultimate test of my strength, endurance, and positive mindset.  Too many nonscale victories to even begin listing.  My Sunday.  Was it easy? Nope.  Did I want to do an hour long workout? Nope.  Do I have other things I could/should be doing instead? Sure.  Did I make a commitment to myself? Absolutely.  Am I sticking to that commitment? You bet.  I cannot even begin to express how proud I am of myself for completing the #shaunathon. An hour long workout that has multiple transformers.  Where I MAINTAINED OR INCREASED almost every single one of my weekly transformers.  Where I said “GO” when I wanted to say “STOP.” Where I told myself “four more and you can rest; it’s okay to pause the video.” Where I drank so much water in one hour.  Where I burned 600 calories.  Do it for you friends. Because damn, does it feel good when you push through that barrier.
The only type of breakfasts I could afford in Tulum .. not complaining though it was delish 😍
