Dropping in to say HEY 👋 after about 6 weeks of travel and going a bit MIA I am finally back in Brisbane and of course my first stop was to see my good friends down @buddhabrotherswestend ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I am honestly beyond grateful to be here, if you can’t tell from the massive grin on my face. But here’s the real story, this moment was absolutely beautiful and the smile completely genuine but what you didn’t see was that only 5 minutes prior I was hugging @raimeeleigh.fitfood in tears because I just received news that my dog, my one and only was put down after 14 years while I was away at sea. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It’s something I will spend the next months emotionally dealing with but in the mean time I still have to live and love in the moment. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I still have to be thankful for all that I have and for the universe & @raimeeleigh.fitfood bringing this bundle of joy over to visit at just the right moment. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Gratitude, love and kindness are worth so much more then any one thing. So be thankful for each moment, love every soul who crosses your path and spread kindness even in the darkest of places. Some Monday lunch inspiration courtesy of @ottolenghi @guardianfeast magazine! . . Black rice with fennel and butternut squash 🎉 . . Cook black rice in boiling water with salt for 35-40 mins & drain Meanwhile roast butternut squash (deseeded, skin on, cut into half moons - I used sweet potato as there was no squash to be had at the shops yesterday!), two fennel bulbs cut into 1cm pieces, with 1.5tsp fennel seeds, 2 tbsp oil and 1 tbsp maple syrup, salt & pepper to season Also roast 2 shallots and a head of garlic in their skin wrapped in tin foil. Leave both to roast for 40 mins. Remove shallots and garlic from foil and add to a blender with some lemon juice, tbsp olive oil and tbsp maple syrup & blitz to a paste. Mix the rice, veggies & paste together & top with chopped dill, chives and a drizzle of lemon juice. . . ☝️I was curious about black rice so looked up the nutritional content. It has more fibre and protein than brown, white and red rice and is packed full of iron. Paired with the sweet potato / squash which is rich in vitamin C, this will aid absorption. As the colour suggests, it’s also high in anti inflammatory anthocyanins - there is as much in half a cup as a serving of blueberries! . . Let me know if you give it a go! PS. When the temperatures drop as far as they have over the past few days, no excuses are needed to eat fruit crumble for breakfast lunch and dinner! 😆 🌙 Ok maybe not dinner, but when it’s made with plant based, whole food ingredients with no added sugar like this apple & raspberry hemp seed crumble, I think it can legit be eaten for breakfast too 🙌🏼 🌙 The other amazing thing about this ✨new recipe ✨ is you can make the no bake crumble ahead of time and use it to top any stewed fruit of your choosing. Uma opção que sempre recomendo de baixa quantidade calórica e que funciona para praticamente todos os tipos de dietas. . Receitinha sem açúcar, lactose, glúten e vegana.. e o melhor, uma delícia 😉 . Ingredientes . 200g de iogurte vegano (receita em posts anteriores) 1/2 xícara de Blueberries congelados para bater com o iogurte Uma porção de Blueberries (a gosto) para salpicar por cima da mousse . Modo de preparo . Bata 1/2 xícara de Blueberries com o iogurte no liquidificador até virar uma massa pastosa . Adicione a porção de Blueberries por cima e sirva. . Se não for ingerir na hora, guarde no freezer .
What a day of food prepping looks like (spoiler alert: cookies!) Mondays, oh Mondays. Last night we binged on Amazon Prime after a long day of prepping, so today I was struggling to get going 🙃 Yesterday we made four portions of @shisodelicious faux salmon bento, two batches of cookies (overall 40 between gluten and coconut cookies), courgette and lime cake and dinner. We froze some of the bakes, and put in tupperware any leftovers for tomorrow’s bentos. Yes, food prepping is exhausting, but it can save 💰 and help you making fresher (and more fun) meals. Organisation though is key. Also, I have probably the best chopper in the world at home, which helps 🔪 A bit tired today, but at least I won’t be going hungry 😏 on another EXCITING note my desk is arriving tomorrow, so watch out for a new sexy workspace 💖

There are pros and cons to both so let’s have a look at a few of them: 𝐁𝐔𝐘𝐈𝐍𝐆 𝐅𝐑𝐄𝐒𝐇 𝐏𝐫𝐨𝐬 •When locally or home grown, fresh, ripe produce is as nutrient-dense as it can be. •Generally better taste and texture than any other form, dried, canned or frozen. 𝐂𝐨𝐧𝐬 • They lose moisture and become susceptible to spoilage within days. • Significant loss of nutrient value begins to occur after 48 hours. • When not locally grown, they are picked before peak nutrient density has been reached to ensure they reach there destination. • They are a lot more expensive. • Takes more effort to prepare and cook. 𝐅𝐑𝐎𝐙𝐄𝐍 𝐏𝐑𝐎𝐃𝐔𝐂𝐄 𝐏𝐫𝐨𝐬 • Usually harvested at peak ripeness, which allows highest nutrient density to be achieved. • Flash frozen, which allows for the retention of most nutrient value. • Generally less expensive than fresh produce. • More convenient way of cooking. • Less waste due to spoilage. Panquecas de limão e sementes de papoila . 🍋1 iogurte natural (ou grego) 🥞2 ovos 🍋4 colheres de sopa de farinha de aveia (ou farinha de amêndoa, ou coco) 🥞1 limão (sumo e raspa) 🍋1 fio de azeite 🥞sementes de papoila (a gosto) . Numa taça comece por misturar os ovos, o iogurte e o fio de azeite. Junte a farinha de aveia, o limão e as sementes de papoila. Numa frigideira pré-aquecida, com uma folha de rolo de cozinha passe um pouco de óleo de coco e coloque colheres da massa sem espalmar. Vire as panquecas e deixe fazer do outro lado.
