Roasted aubergine and tomato gnocchi 🍆🍅 I saw this little number in the @waitroseandpartners magazine and thought I'd give it a bash. A tasty little meal and super easy to put together so I'll defo be making it again - next time I'll add some mozzarella to melt through to make it extra creamy 🤗🌱 ~ 2 medium aubergines (about 500g), cut into 3cm cubes 3 tbsp olive oil 400g pack cherry vine tomatoes, halved 3 cloves garlic, sliced 500g pack fresh gnocchi 30g Parmigiano Reggiano, grated ¼ x 25g pack basil, leaves only, torn ~ 1. Preheat the oven to 200ºC, gas mark 6. Toss the aubergine with 2 tbsp oil and spread out on a large baking tray. Roast for 20 minutes, turning halfway, then stir in the tomatoes and garlic and roast for a further 10 minutes. 2. Five minutes after you put the tomatoes in, bring a large pan of water to the boil. Add the gnocchi and simmer for 2-3 minutes. Drain and stir into the baking tray coating in the cooking juices, then sprinkle with the cheese. Return to the oven for a final 3 minutes, then divide between 4 plates and scatter with basil leaves.

Linkedin was actually released 2 years before Facebook came on the scene, and was designed to better the old style paper resume. Unfortunately the user experience wasn't great and people found Facebook, Twitter & Instagram. It's safe to say Linkedin have been putting the work in to compete with the rest and this has resulted in it being one of the fastest growing social media platforms out there. ⠀ ⠀ Pros -⠀ - The least personal channel so people are more likely to connect⠀ - Status' stay live for longer, so there's an increase in engagement⠀ - It's the most professional channel so there's less chance of confrontation⠀ - Improves your companies SEO⠀ - Easy to research your target audience⠀ ⠀ Cons - ⠀ - You won't be able to reach younger audiences who haven't started a career yet⠀ - 600 Character limit on posts⠀ - You receive a lot of spam messages ⠀ - It's a lot more time consuming than other social media platforms⠀ ⠀ Although there's not as many active monthly users as the other platforms, Linkedin is a powerful tool to use on a professional level. As mentioned, less than 1% of active users are posting, so there is a lot of room for creating content and publishing articles. It is free to use although they do have a paid premium service which gives you some more tools to use.
