My good pal @sabato3 recently spotted this very cool portrait inside @davidchang's newest spot -- Bar Wayō -- located in NYC's Financial District. Yep, that's a photo of Gregg Popovich, the head coach of the @Spurs. And while Popovich is a legend in basketball, he is just as revered in the world of food and wine. (In San Antonio, acclaimed chef @weissmanandrew, who has built a restaurant empire, told me, “Basically, the Spurs play fundamental basketball, and that's what I try to get my guys to do on a daily basis.”)
the half smothered royale at bar wayō wouldn’t exist without a coffee shop–diner inside a bowling alley in southwest LA. chef @sameazy spent a lot of time there as a kid. the gardena bowl served a mix of hawaiian and japanese food—potatoes weren’t that common, but rice was. as sam grew up, his very first cooking job was also in a diner, where his go-to meal was a country skillet, essentially bacon and sausage and eggs with country gravy. he’d sub in rice because it took him back to memories from the gardena bowl. he’s joining dave on this week’s episode of the @davechangshow. sam’s cooked a lot of places across the momoverse, but bar wayō is the first restaurant that’s all his own. he’s always worked to be thoughtful about making food, but as he says, wayō has been a moment to be thoughtful about something else entirely: leading a team of people. hit up the link in bio to listen to his story, and stop by bar wayō to try the latest iteration of the half smothered royale at lunch or dinner.

THE FOOD at Bar Wayō even if you didn’t want a reason to check out the seaport these days, you have one now. @sameazy KILLED this menu 👏🏼 … and a huge bonus to the food (plus the great outdoor space) was seeing some familiar faces - @ecsharky017 & @awedgie9 🙌🏼 you’ll settle in and feel right at home. 1: Squid Seca: even if you don’t love squid as much as I do, this dish has so much going on for it in the best way. Amazing flavors - a little spicy, nutty and squidy 2: Hamburg Dip with wagyu beef & American cheese 3: Chicken & Gravy Balls: these were DOPE 4 & 5: Onion Rings with ranch & trout roe 6: Grilled Fish Sandwich: swordfish + pickled chili, it’s a sleeper hit 7: Half-Smothered Royale - pretty much a definition of Ugly Delicious • … so i’m back. a successful restaurant rec is my second favorite thing after eating. i got caught up in likes, eating for the sake of taking a picture, having a “posting schedule”, etc and lost sight of the fun i was having that drove me to start a separate food account in the first place. absolutely no disrespect to anyone that’s running their account professionally because that can obviously still be a great time. that’s just not the route for me so here we are in a healthier (mentally, maybe not calorically) way - let’s have some fun.
@sameazy is the chef at our new restaurant Bar Wayō and my guest on this week’s episode of @davechangshow. This is volume 2 of “our own worst critics” like I did with @jskenes. This time we’re turning the microscope on ourselves. Sam is a great cook and understands how to make delicious food. But as he’ll tell you, he’s had to grow as a leader and a person to become a great chef. Sat night at David Chang’s new spot Wayo - great new takes on classic cocktails and bar food. This is the curry doughnut - the best version of the Japanese bakery curry pan, crossed with a croquette. They don’t tell you about the heat, which builds with each bite (though i don’t think they expect one dude to eat the whole thing)
